These raw vegan tacos are so worth the effort. My recommendation would be to make a double batch. The corn tortillas and the sunflower taco 'meat' will freeze well. The sour cream leftovers will last around a week in the fridge too. It's great on salads and as a dip for crudités.
That way you get to enjoy them now and have the convenience of a really special meal waiting in the freezer.
